Certainly you sound smarter than I'll ever be, but you're not using parallel (or American) units of measure here.
But Andy's right about the 2% being about half the fat of whole milk. Although whole milk used to be 5 and half percent milkfat in the deliver it to your door days. Which is probably most accountable for the taste difference he's up in arms about.
