Canon has three levels of SLR cameras. Yes the Rebels are the cheapest and also the cheapest in construction. The higher end models (Like the EOS-1D Mark III...droooll) are more expensive but also built like a tank.
If you can find a used Canon EOS Rebel XT with the kit lens (18-55mm, f3.5-5.6) for under $500 then go for it. You won't be disappointed. The Nikon D40 is a nice camera as well. I've got the Rebel XTi and so long as you aren't constantly dropping it or tossing it around, it'll last you just fine.
