I love chicken pot pie, so I make a hearty chicken pot pie soup. The crust is tedious.
Fry onions, celery, carrots in half a stick of butter. Then add chicken and the other half stick of butter. Add chicken and/or vegetable stock, parsley and thyme. Add optional peas, corn, mushrooms. Normally I add a few cans of Cream of Mushroom soup here, but you can use heavy cream at the end instead. Boil and let simmer for a while.
