On the canned fish train of thought
This one is really cheap and is a fast mid week dinner.
Salmon cakes
1 cup of left over mashed potatoes
2 cans of salmon red or pink . You can remove the skin and bones if you like. I just remove the skin and the bigger bones. The small bones are full of calcium and if you mash it up really well they melt into the salmon cake
1/2 finely chopped onion
1 stalk of celery finely chopped
Satuee in a splash of oil and add to potatoes
1/4-1/2 tsp of cayenne pepper
1 tbsp of hot chili sauce or chili powder
finely chopped parsley
finely chopped fresh dill
2 tbsp of capers
zest and juice of a lemon
salt and pepper to taste
Form mixture into disks about 1" high
coat in bread crumbs and refrigerate for at least 1/2 hour. Fry in a little olive oil and serve with a salad.
