While I have time I'll post a few more...BTW, Love the crockpot recipe!
Basmati Rice pilaf
1/2 white onion
5-6 cremini or button mushrooms
sauteed in 1 tbsp olive oil 1 tbsp of butter until browned and softened
Add
2 TBSP curry paste
1 tsp of ground coriander, cumin and chili powder
1 tsp cinnamon
salt and pepper
1 cup of basmati rice (rinsed well)
toast in pan with spices and veggies
Add 1 cup water 1 cup low sodium chicken stock (total 2 cups liquid)
1/2 cup raisins
Cover and cook until rice is tender then fork until fluffy.
I add about 1/4 cup of toasted nuts, whatever I have on hand.
This takes about 20 minutes with 12 minutes of the 20 being cook time.
