Regarding the mixed letter stuff, it's true that reading faster makes it easier to read, since reading letter by letter would make the text nonsensical. But the reported phenomenon is generally not true, we can only unscramble words that aren't scrambled that well. The original text basically consists of mostly easy words that then set the context for the rest.
Here is a sentence that you will not be able to read right away, even though first and last letters are in the right order:
Bblaaesl pryleas pnmrrioefg smiirally aeoulltsby dvrseee clbrpmaaoe tteenmrat.
