Bacon Onion Marmalade
4 lbs onions (sliced thin)
4 slices bacon (thick cut)
1 1/2 cup sugar
1 1/2 cup dark brown sugar
2 cup red wine
1 cup balsamic vinegar
2 tsp.salt
2 Tbsp. extra virgin olive oil
1. Fry bacon in a pan, then set the bacon aside, saving the grease
2. Cook the onions in the bacon grease and 1 Tbsp olive oil until golden
3. Add the rest of the ingredients (sugar, brown sugar, red wine, balsamic vinegar, salt, and olive oil, and the bacon crumbled) and cook over medium heat until thick, stirring often. It took about 45 minutes for me to reduce. To test, drag a spoon across the bottom of the pan. If it look like you parted the sea for a few seconds, it's done.
This will keep for about 2 months in the fridge if you seal it up (in theory, but it's never lasted long enough to find out). I used mine for burgers, but watch out,
people will steal it to put on any beef.

Garlic aioli on bottom
Crumbled blue cheese melted on the burger
Garlic Aioli
2 Tbsp. minced garlic
1 cup mayonnaise
1/2 tbsp lemon juice
1/4 tsp salt
Step one: Mix it all up. Done. This is good on anything you usually use mayo on.
