As regards to the cheeks, the face cheeks are the best, you give the butt cheeks to the people you hate. We usually also cook the heart and the liver in a pan on the fire, however last time, we left them out in the sun for too long, and we then could not cook them.... a fukin pity!

the pig didnt look bad at all, far better, i would wager, than anything like the garbage you get at the grocery store, but you get one thats genetically superior, you taste the difference. most of the hogs we had growing up were offspring of animals that had at least placed, if not won state and national shows the previous year. there was a good breeder up in iowa park that we bought from annually. your pig, i noticed, it wasnt all fat, meaning it wasnt fed slop(table scraps) of some kind. if i had to guess...16-18% protein content in its food? possibly mixed with oats as a filler? without knowing how many months old it was, and the weight of food given each day, its hard to gauge.... anyway, one more thing, 260 lbs is the sweet spot, when the meat is at its best quality, thats the conventional weight ive always heard, anyway.
