Nice to hear Laura on the show again. I totally feel her pain on doing building work and trying to open a venue. My sister used to be an investigator for the Dept. of Buildings, and there is a remarkable amount of corruption —*everything from shady landlords looking to cut corners, all the way to organized crime with big insider contracts for construction, dumping, etc. When she told me about the "expeditors" I nearly lost my shit — and I'm nowhere close to buying or renovating a property. Just the idea seems absurd.
So kudos to Laura for pulling it off and getting something open! I can't imagine the extra dimensions of nonsense involved in the liquor license. (I wonder if that comes with a dancing license as well. Don't get me started on those bullshit rules.)

I know a bar with a similar issue, they don't have a license as a club so they operate as a "restaurant" where instead of charging a cover at the door, they charge you for a plate of nachos or whatever and give you a voucher that you can choose to redeem or not, and they can't have a dance floor, so they just have these huge long tables that everyone just dances on.
