Myself, been racking up the hours in Fallout 3 lately. I found that I really didn't get sucked into the game until about middle-way through the main quest. Afterwards, with the random questing and exploring it became a really engrossing game. Still a little over-hyped... like the games mentioned above, but good nonetheless.
Prepare to flame away... I absolutely LOVED Dead Space. Maybe it says something that Silent Hill 2 is in my top 5 games of all time haha. I find myself going back to Dead Space over Fallout.... weird but true.
