Did some skirt steak for fajitas on the weekend. Left it in for 18 hours then threw it on the bbq.

Absoultely melted in the mouth, but wasn't as charred as I like it and was medium-well, so that sucked dick.

Gonna try it again having it sous-vide'd super-rare, then spend moar time on the BBQ.
