Try this:

6 chicken breasts with bone and skin or whole chicken or 6 thighs with legs attached
3 cups pomegranate juice
2 cups pomegranate syrup
8 garlic cloves, roughly chopped

2 T Butter (or margarine if you keep kosher)

Combine pomegranate juice, syrup, garlic, mint and pepper. Marinate chicken in the combination in a ziplock bag overnight (can be up to 2 nights).

Preheat oven to 350.
Remove chicken from marinade and place in med-hi heated pan into which you have melted the butter. Sear chicken 4-6 minutes per side. Place chicken into a baking pan and bake, skin side up, 40-45 minutes.

While chicken is baking, take the marinade, pour into a pan and boil it about 30 minutes, or until reduced by half. Do not burn. Skim it to remove the chicken impurities.

Serve chicken with sauce dribbled over it.
