Here's a really simple and tasty meal I've been making for awhile now.
I like to use boneless chicken thighs but you can use what ever cut you like. I coat each thigh in Italian bread crumbs and throw them in a lightly oiled pan on medium heat. I like using my cast iron pan but you can use whatever. Flip chicken when the bottom is golden brown and continue cooking for about the same amount of time. With it I like to quarter baby red potatoes, season them with black pepper and Italian seasoning and throw them in a pan (again I like cast iron but any pan will work. also medium heat on the stove. you can also start them off on the stove to get the outside cripsy and then throw in the oven at 350 until soft.) Then I usually serve a veggie with it. Normally I like the frozen bag of mixed veggies so I can just throw them in a sauce pot for 8 minutes. Either that or I boil a couple cobs of corn for 4 minutes. Also, pretty much any microwavable "steam in the bag" veggies are awesome and easy. Anyway, it's quick, easy and it taste good. I just made stew for the first time yesterday, I think it's gonna be a staple.
Buy a crock pot. Cut up some meat, throw in potatoes, carrots, bouillon cubes, water. Sits for 5-10 hours, then...delicious stew! There's pretty much no way to screw it up, it's always going to taste at least good. Initial outlay was $50 for the crock pot (you can get a smaller one for $20), but I can cook 4lbs of meat at a time. I can set it in the morning to cook for 10 hours, then have it stay warm for 4 before refrigerating, so I can be out for up to 14 hours and have delicious food ready. The bottleneck seems to be chopping up the meat (around 10-15 minutes), otherwise the prep is about 5 minutes, then another 5 to clean the empty pot. I'll have to figure out how to chop the meat faster faster, or maybe just try ground beef or chicken tenders.
