Mayo isn't sweet? Sugar isn't in the recipe and none of the ingredients are sweet?

How do you feel about ketchup? That's basically all sugar.
Word on the street is mayo in Scandanavia is typically sweet (sadly, since my old man's fam is Danish) so I guess NZ mayo is that recipe. In general sauces here are way too stupidly sweet - you go to Subway for example and instead of mustard or chilli sauce options you only get fucking HONEY mustard or SWEET Thai Chilli sauce. Reason #376 not to eat at Subway.

Ketchup is for children. I'll enjoy aioli with fries once in a while but the best thing aside from some type of hot sauce is to dip those bad boys in either cider or malt vinegar. Try it, it'll put hair on your chest.

Yes UK style vinegar on fries is good stuff

I lived half a year in Denmark doing a study abroad semester. Didn't notice sweet mayo but they did have sugar browned potatoes so I wouldn't be surprised.

Sounds strange but are surprisingly delicious. But while I generally love anything savory I do enjoy fruit with meat. Like apples stuffed in a turkey, mango butter chicken or cranberry sauces.

They cook the mango into the butter chicken or it's on the side? A lot of Indian restaurants and takeaway joints here have a spicy mango chutney that I have to admit WHEN USED IN MODERATION can add a little bit of magic to hot curries.

Usually the mango would be cooked in the sauce but yes chutneys are delicious on the side as well.
My mom used to make what is probably the knock off version of this with canned peaches in a cream sauce

Maybe this is The Universe's way of telling us we should start a sauce podcast. I bet there are only about 2 dozen of those and none would be as scintillating as ours.
