You can actually stay without a visa for 180 now, but yeah the work thing is tough. I'm looking at something similar but medically.

Call your US embassy in Itay for it all, the work visas are the first thing they will tell you and it's a very expensive process for this, it also costs to apply with no guarantee of being accepted.

Keep you posted of what I find, I need to call consulates in LA to see.

As always, there is more behind the scenes that you need to find. I'm sure it's not so black and white.
