I am a home cooker type, cook every night for the family....thought i'd add a few recipes to the mix.

Chapatis (Indian pancakes)

1 1/2 cup flour (use 1/2 brown if you've got it)
1/2 a head of cauliflower, finely grated (Used my box grater)
2 TSP ground cumin
2 TSP Tumeric
Salt and pepper to taste
Freshly chopped Parsley (1/2 cup approx)
Freshly cut chives (1/4 cup approx)

All of this should be combined in a big mixing bowl. Using clean hands, mix in cold water, start with a table spoon at a time until you get a cookie dough consistency. Divide batter into even portions and roll into balls. Spread flour onto your counter and roll out into aproximately 3-4" disks
Heat up a frying pan until it's quite hot and add the pancake to the pan without any oil or butter. Crisp up each side until it blisters (about 2 minutes) and then brush with Olive oil.

Pineapple Salsa
1/2 a fresh pine apple diced (can used canned too)
2 TBSP-1/4 cup Fresh Chopped Cilantro
1/4 cup fresh parsley chopped
2 TBSP Sweet Chili sauce
1/4 small finely shopped red onion
1/2 chunky chopped red bell pepper
1 lime zest and juice

You can add 2-3 TBSP of Olive Oil but it isn't necessary

Sweet potato soup


2 cups leeks cleaned and finely diced
1 stalk of celery finely diced
1 carrot grated
Salt and pepper to taste
1 tsp ground cumin
1 tsp ground coriander
Dried ground chili powder to taste
1/2 tsp cinnamon
2 cloves finely chopped garlic
2" peeled and diced fresh ginger

Sautee all the above in 2 TBSP butter 1 TBSP olive oil until veggies are soft but not browned

add 2 medium sweet potatoes, one white boiling potato peeled and diced
3-4 cups low sodium chicken stock
1 can coconut milk (if you like)

Cook on low until potatoes are fully cooked and soft.
If you have one use your immersion blender until soup is pureed. If you don, throw it into the blender

Added zest and juice of 2 lines or one lemon.

Chocolate Pavlova

(holy fuck this one is awesome, Thank you Nigella Lawson)

Preheat your oven at 400F

Beat 6 large eggwhites to firm peaks

add 1 1/2 cups of sugar (300grams) a tablespoon at a time

fold in
3 TBSP of cocoa powder sifted
1 TSP of vinegar (balsamic or red wine)
1 bar of dark chocolate (50g) chopped into shards

Line a cookie sheet with parchment paper and draw a rough circle at about 6" across in pencil
Flip parchment paper over otherwise the lead from the pencil will transfer onto your pavlova.

Pop the pavlova into the hot oven and immediately turn your oven down to 300F, bake for 1 hour 15 minutes.

The Pavlova will be like a big puffy chocolate cloud that will slightly collapse in the middle after you take it from the oven.

Whip 500ml (half a pint) of heavy whipping cream until is to a soft whipped, don't over whip. Pour a pint of fresh raspberries over and sprinkle with dark chocolate.

This taste like a light as air brownie...it looks like a show stopper...every time I have made this for a dinner party I am asked for the recipe. It is EASY too...

Carrot Salad

3 large carrots peeled and grated into long strips
1 apple peeled and finely grated
1/2 cup dark raisins

1 TBSP runny honey
1 TSP dijon mustard
1/2 a lemon zest and juice or 1 lime zest and juice

salt and pepper to taste
nice side dish, takes seconds to make

This is pretty close to my fruit salsa recipe. The only things I do differently is add fresh tomatoes and a bit of honey to the lime juice. Have you ever tried it with different fruit? I find it pretty much works with any firm fruit, when I was hard up I once diced up some canned peaches and I was pleasantly surprised with how well it turned out.

Hope you like the soup! My mom made it for us one night and it was so good I had to make it the next night!

Here's an easy one for lunch

Tuna melts

1 can flaked tune (I like packed in water)
finely chopped celery 1/2 stalk
1/4 of a small onion very finely chopped (even grated)
Mayo to taste (For me it's about 2 -3 tbsp....add yogurt to the mayo if you're cutting down on fat)
1 1/2 TSP curry powder
Salt and pepper to taste
generous squeeze of lemon juice

Put this tuna mixture on your favourite bread with top with cheddar and broil until golden brown.
