On the canned fish train of thought

This one is really cheap and is a fast mid week dinner.

Salmon cakes
1 cup of left over mashed potatoes

2 cans of salmon red or pink . You can remove the skin and bones if you like. I just remove the skin and the bigger bones. The small bones are full of calcium and if you mash it up really well they melt into the salmon cake

1/2 finely chopped onion
1 stalk of celery finely chopped

Satuee in a splash of oil and add to potatoes

1/4-1/2 tsp of cayenne pepper
1 tbsp of hot chili sauce or chili powder
finely chopped parsley
finely chopped fresh dill
2 tbsp of capers
zest and juice of a lemon
salt and pepper to taste

Form mixture into disks about 1" high
coat in bread crumbs and refrigerate for at least 1/2 hour. Fry in a little olive oil and serve with a salad.

Crockpot!!!!!!!!!!!!!!!!!!!!!!!!!!!

2 lbs smoked pork chops
2 cups apple butter
2 teaspoons quick-cooking tapioca
1 teaspoon italian seasoning
5 red apples
Change Measurements: US | Metric

Directions:
Prep Time: 20 mins

Total Time: 6 1/2 hrs
1 Combine apple butter, Italian seasoning and tapioca in crock pot.
2 Peel and slice apples put in crock pot.
3 Put pork chops on top of apples and spoon sauce over all.
4 Cook on low 5-6 hrs or high 3-3 1/2 hours.

Summer Fare

1 lb rigatoni pasta, cooked and cooled
1 lb turkey ham
1 lb cheddar cheese
2 tomatoes, diced
1 onion, diced
1 green pepper, diced
2 dill pickles, diced
1 (8 ounce) bottle Italian dressing
Change Measurements: US | Metric

Directions:
Prep Time: 15 mins

Total Time: 15 mins
1 Mix all ingrediants together except dressing.
2 add dressing to taste.

Desert

1/2 cup peanut butter
16 ounces butterscotch chips
1 (3 ounce) can chow mein noodles
2 cups miniature marshmallows

1 In a double boiler melt Peanut butter and butterscotch chips over low heat.
2 When smooth, remove from heat and add noodles and marshmellows.
3 Drop mixture onto wax paper by the spoonfull.
4 Allow to cool completly before enjoying.

Appetizer

18 chicken wings
salt
pepper
2 tablespoons vegetable oil
1/2 cup soy sauce
2 tablespoons ketchup
1 cup honey
1/2 minced garlic clove



1 Preheat oven to 375°F.
2 Grease a 9x13 pan.
3 Salt and pepper wings to taste.
4 Combine all other ingredients and pour over wings.
5 Bake for 30 minutes, flip wings over and bake for 30 minutes.

Ok

While I have time I'll post a few more...BTW, Love the crockpot recipe!

Basmati Rice pilaf

1/2 white onion
5-6 cremini or button mushrooms

sauteed in 1 tbsp olive oil 1 tbsp of butter until browned and softened

Add

2 TBSP curry paste
1 tsp of ground coriander, cumin and chili powder
1 tsp cinnamon
salt and pepper

1 cup of basmati rice (rinsed well)

toast in pan with spices and veggies

Add 1 cup water 1 cup low sodium chicken stock (total 2 cups liquid)
1/2 cup raisins

Cover and cook until rice is tender then fork until fluffy.

I add about 1/4 cup of toasted nuts, whatever I have on hand.

This takes about 20 minutes with 12 minutes of the 20 being cook time.

Lemon Chicken picatta
(Date night meal)

2 Chicken breasts (skinless boneless) butterfly'd and pounded to about 1/4" thickness

Bread the breasts, dip in flour that has had salt and pepper added, then two beaten eggs then store bought bread crumbs (Panko if you want to get fancy)

Sautee breasts in large skillet in 4 TBSP olive oil until the crust is brown but the chicken is only partially cooked.

Remove from skillet.

Deglaze pan with 1/2 cup of white wine.

Add 2 TBSP butter to wine and about 2-3 tbsp of flour and 1 tsp of dried ground thyme or 3-4 sprigs of fresh thyme and whisk

Add low sodium chicken stock, about 2 cups and whisk.

Return chicken to pan and cover, cook until chicken is 180F

Add lemon zest and juice for 1 small lemon or 1/2 a large lemon

Sprinkle 2 TBSP of capers and a hand full of chopped parsley.

I serve with with a salad and pasta using the chicken gravy as the pasta sauce

Actually its my mothers recipe and she hasn't smoked anything in 30 years. It would be good to give to a stoner party

Perfect Roast chicken

Nothing in this is really measured out. After roasting this chicken and tasting the moist breast and fully cooked legs and thighs you will never make a whole chicken any other way

2 Lemons
Fresh Rosemary
Fresh Basil
Garlic
Butter
4 lb chicken
Salt
Pepper
Spices to taste

1. Preheat oven to 450 with roasting pan in the oven
2. Combine basil, garlic and butter in a food processor
3. Take butter mixture and insert under skin on top of the breast, leaving about 1/4 of mixture to the side
3. cut lemon(s) in half and put into body cavity with whole sprigs of rosemary
4. Tie up the legs tight to ensure lemon and rosemary stay in, using the same butchers twine tie up the wings like this
5. Cut three slices into the legs/thighs and rub the rest of the butter into the exposed legs/thigh meat.
5. Cover the rest of the sking with salt and pepper or your choice of spice mixture.
6. Pull out Roasting pan and put in a couple of slops of olive oil, turn the oven down to 400. Put the chicken with breast down on the pan and then in the oven for 10 minutes.
7. Flip the chicken over and cook about 20 minutes per pound.

8. ENJOY
