Here is a good one for breakfast. The preserves can be any flavor but tart works the best Ingredients 1 loaf French bread 1 (18 ounce) jar raspberry preserves 16 ounces cream cheese 1 cup pecans, chopped 1/2 lb confectioners' sugar Directions: 1 Slice bread length wise. 2 Spread 1/2- 3/4 cup preserves on each slice of bread. 3 Place in freezer overnight. 4 Mix cream cheese, confectioners sugar and nuts until it is a very heavy paste. 5 Spread on one slice of bread. 6 Place the slices of bread together, wrap in foil and leave in the freezer overnight. 7 To serve slice while still frozen, dip in egg and cook in a frying pan or griddle. |

Check out my first recipe, Indian Chapatis, made with HALF a CAULIFLOWER....very low carb ,low fat and tasty....and, if I say so myself...an original use of the vegetable. My boyfriend HATES Cauliflower so, I didn't tell him that these were filled with it, asked him if he liked them...and, yes, he did.
Mix mashed cauliflower with mashed potatoes. With all root vegetables try them roasted...holy COW what a difference in flavour. Use an olive oil sprayer, much less fat, spray all the cauliflower with the olive oil, salt and paper, roast on high for 20 minutes or so (This is amazing with brussel sprouts) |

anyone from the midwest has probably has had some version of this. Its my favorite and its super easy & quick to make!
Cheesy Tater-Tot Casserole Ingredients: - 1 lb Ground Beef - 1 can Cream of Mushroom Soup - I Bag of Tater-Tots - Chddar Cheese Schredded Directions: Brown ground beef & drain using a 9 X 13 baking dish layer from bottom to top : Ground beef, then soup, then tater-tots, enought to cover the top of everything, and top with cheese. (some opt to add corn after the beef is layed, not me so much) Bake at 350 degrees for 30-35 minutes or until cheese is melted and bubbly! Ready in : 30-60 min Serves : 6 on average

Roasted cauliflower sounds delicious. I decided since I've been lurking in here a lot I should add a recipe. I made this recipe because I've always been terribly disappointed whenever I tried a bottled Teriyaki or honey garlic sauce. It's a mix between the two and it goes great in stir fry, baked with salmon or chicken, I've even tried using it in a slow cooker and it turned out great.
1/2 cup reduced sodium soy sauce 1/2 cup water 2 Tbsp garlic powder 2-3 cloves minced garlic 2 tsp hot pepper flakes (I use more but I like it really spicy) 1/2 tsp sesame oil 1/4 cup brown sugar (although to be honest I usually use more like half a cup)

I have nights when I just do dump-pan dinner, meaning I find whatever looks good, dump it in a pan, mix, and serve. The other night I made a pretty damn good dump-pan pasta sauce:
sautee olive oil and diced garlic in a skillet with salt and pepper add one small can of sliced mushrooms add 1-2 tablespoons of capers (however you like) squeeze lemons (1-3 wedges) add chicken breasts covered in bread crumbs (I like italian flavored bread crumbs) just as chicken is about to finish cooking, add chopped basil (only a little) If there is excess olive oil, drain it, but otherwise, just take all of that, toss pasta in (any kind, doesn't matter), add the rest of the chopped basil and cheese. nom nom nom. |

Some of the weight watcher-type books feature using cauliflowers to sub for potatoes to serve them as mashed potatoes. I've tried them before. They're really not too bad. Prep your potatoes the same way, just not so much butter. Defeats the purpose otherwise.
