I would just rip them as an iso so you don't lose any quality. Most media players, including Kodi/Plex can play them this way.

I should have warned you about that. A lot of free software now bundles extra programs when you install it. Always choose advanced installation, then deselect everything except for the main program.

Freemake software is the easiest to use, but you can also try Handbrake. I've used Freemake video converter to rip and edit old dvd's, but not to iTunes.

I use linux so I just run

dd if=/dev/dvdrom of=imagefile.iso

I'm sure there's something easy on google for your operating system of choice
